Healthy Poha With Oats and Sprouts

Ingredients

  1.  2 cups Poha
  2.  1 cup rolled oats

  3. 1 large Onion, finely chopped

  4. 1 tsp Mustard seeds

  5. 1/4 cup Peanuts (optional)

  6. Finely chopped broccoli

  7. 1/4 cup mung sprouts

  8. 1/4 cup black chana sprouts

  9. 1/2 tsp Turmeric

  10. 1-2 Green chilies, or as per taste, thinly sliced

  11. 1/2 tbsp powdered sugar

Salt to taste

Lemon juice to taste

Tips

Optional Ingredients : You can also add other vegetables like boiled Potatoes, Green peas ,tomatoes.

Method

  1. Wash the rice flakes &oats in water.

  2. Let it drain for 10 minutes.

  3. While that’s draining, heat 1-2 tsp oil/ghee/butter.

  4. Add mustard seeds .When the seeds splutter, add the peanuts and stir until roasted. You can alternatively roast/toast the peanuts separately and add them towards the end too.

  5. Add the onion. Once soft, add the curry leaves and turmeric powder.

  6. Add sprouts.

  7. Add the drained poha.

  8. Add sugar.

  9. Add the drained Poha next.

  10. Add lemon.

  11. Mix all well.

  12. Garnished with broccoli

  13. Ready to serve

Buck wheat flour Paratha

Buckwheat is a powerhouse of nutrients. Being gluten-free It is thus considered suitable for those who are allergic to wheat .Great for the digestion.  Whole grain buckwheat can be very helpful in weight loss.

The triangular seeds known as buck wheat groats ,are often made into flour for use in noodles,cakes,and bread and many gluten-free products.

Kuttu ke atta ka paratha or vrat (fast) ka paratha is made during navratri fasting or other religious fast. As per the fasting rules, only certain flours and ingredients are allowed during fasting days.

So kuttu ka atta is used in making many recipes during fasting days like kuttu ki poori, pakoras

INGREDIENTS

2 cups kuttu ka atta/buckwheat flour
1 tbsp chopped coriander leaves or dhania ke patte
1 medium to large potato or aloo
1 green chili or hari mirch, chopped (optional)
rock salt or sendha namak as required
oil for ghee for roasting

Method

  1. Boil the potato till its completely cooked.
  2. Peel and mash the potatoes when still warm.
  3. In a bowl, mix the mashed potatoes, rock salt, coriander leaves and green chilies with the kuttu ka atta
  4. Take on ball and with the hands and roller roll it.
  5. Place the roti or paratha on the tava.
  6. When one side is partly cooked, flip and let the other side cook.
    add½ tsp ghee or oil on top and then flip again.
  7. Cook for a few minutes and meanwhile smear again ½ tsp ghee or oil on the top.
  8. Flip once or twice till the rotis have brown patches.
  9. Prepare all kuttu ka atta ke rotis or parathas this you can serve kuttu ka paratha with vrat vale aloo ,arbi and louki.

Eggless Almond Cookies

Eggless Almond Cookies

Ingredients 

  1. Wheat flour – 300 gm
  2. Baking powder – 1  1/2 tea-spoon.

  3. Almonds – 150 gm

  4. Butter – 150 gm

  5. Sugar powder – 200 gm

  6. Milk – 1 table-spoon.

Method

  1. Mix the flour and baking powder in a bowl and sieve them.

  2. Save 20-25 whole almonds and grind rest of them. Cut the almonds into long two pieces.

  3. Take a big sized bowl and put butter in it.

  4. Heat it a little so it melts and then add sugar into it. Whisk the mixture well.

  5. Add flour into the mixture and keep on whisking it till it becomes smooth and everything dissolves well into each other.

  6. Now add milk and ground almonds into the mixture and knead it to make a dough.

  7. Grease the tray with little oil. Take a small part of the dough, roll it into a round ball, keep it between your palms and press it with light hands. Fix the half chopped almond at the center of the cookies and keep it in the tray.

  8. While placing the cookies in the tray make sure that 2 cookies are kept at a distance as their size increases on getting baked.

  9. Pre-heat the oven at 180 C. Put the tray into the oven for 2o min set at 180 C temperature. Now check the cookies that it has turned light brown from the upper surface . This means your cookies are properly baked. But if this is not the case, then bake them for another 5 minutes. Take out the tray from the oven and let the cookies cool down.
