Carrot Halwa(Carrot Fudge)

Carrot halwa, also known as gajar ka halwa, is an Indian dessert. It’s made with grated carrots, whole milk, dried fruit, and nuts, and it has a delicious light fudgey texture.

Ingredients

  1. 5-6medium carrots

  2. 1 1/2 litres full fat milk

  3. 4 tbsp ghee/clarified butter

  4. 150 gms sugar

  5. Cashews/kaju(Dry fruits of your choice)

  6.  3-4green cardamom/chotti elachi, powdered finely in a mortar-pestle or about ⅓ tsp cardamom powder

  7. A pinch of saffron strands/kesar (optional)

Method

  1. Rinse, peel and grate the carrots.

In a kadai or deep thick bottomed pan combine milk and grated carrots.

  1. On a low to medium flame, bring the whole mixture to a boil and then simmer.

while the mixture is simmering on a low flame, keep on stirring in between.

the grated carrots will cook in the milk and the milk will start to reduce and evaporate.

when the milk has  reduced, add the ghee, sugar and powdered cardamom to the mixture.

  1. Stir well and continue to simmer and cook on a low flame.Do keep on stirring the gajar halwa in between.Towards the end, add the cashews and simmer till all the milk is evaporated. switch off the burner.

serve gajar halwa hot, warm or you can also serve it cold.

*Carrot Halwa can be made in  by using khoya ( milk thickened by heating in an open pan)

If we are using khoya then reduce the quantity of milk in starting rest of the method is same.At last add khoya to the mix..CYMERA_20150507_122824
