Tahari/ Vegetable Pulao

Tahari is a very popular Pulao in India especially in the states of  Uttar Pradesh .


  1. Basmati rice-1 cup
  2. Potato 1
  3. Tomato 1
  4. Peas 1 cup
  5. Carrot 1/4 cup
  6. Cauliflower 1/4 cup
  7. Onion 1 ( optional)
  8. Paneer 1/2 cup
  9. Chopped ginger 1 tsp
  10. Chopped Chili 1 tsp
  11. Fresh coriander leaves
  12. Water 2 cup
  13. Turmeric powder 1 tsp
  14. Chili powder 1/2 tsp
  15. Salt-1 tsp
  16. Garam masala-1/2 tsp
  17. Ghee 2 tbsp
  18. Cumin seeds 1 tsp


  1. Wash and soak rice in water for around half an hour.
  2. Peel and chop  all veggies  in small pieces.
  3. Heat ghee in a pressure cooker.
  4. Add  Hing and cumin seeds.
  5. Add chopped ginger and green chili.
  6. Saute  onions then add tomato and all chopped veggies.
  7. Add turmeric and chily powder.
  8. Drain the water from the soaked rice and add rice in the cooker ,saute gently for few seconds.
  9. Add salt and Garam masala.
  10.  Add water and mix gently.
  11. Pressure cook  on medium heat for 1 whistle.
  12. Add chopped fresh coriander
  13. Serve hot with coriander chutney and yogurt.
