Baigan Bharta/Eggplant

Baigan bharta is an Indian  vegetarian dish that is prepared by mincing eggplant.This is my mother’s recipe.

Ingredients

  1. 2 Baigan/Brinjal
  2. 1 Onion chopped
  3. 2 tomatoes chopped
  4. 1 tbsp mustard oil
  5. 1 tsp Ginger chopped
  6. 1 tsp green chili chopped
  7. 1 tsp Cumin seeds
  8. Pinch of Asafoetida
  9. 1/2 tsp Turmeric
  10. 1/2 tsp Chili Powder
  11. 1 tsp Coriander Powder
  12. 1 tsp Garam Masala
  13. Coriander leaves
  14. Salt to taste

Method

  1. Roughly cut the baigan in 4 pieces and wash them.
  2. Put them in pressure cooker for 1-2 whistle.
  3. Cool the brinjal, peel the skin and mash them. Keep aside.
  4. Heat the ghee in a pan and add the  hing ,cumin seeds.
  5. When the seeds crackle, add ginger,green chili and onions and sauté them.
  6. Add the tomatoes, turmeric powder, coriander powder,salt,red chili powder, mix well and cook  for 2 to 3 minutes, while stirring occasionally.
  7. Add the mashed baigan and sauté them for some time. Switch off the gas.
  8. Lastly add garam masala and coriander leaves.
  9.  Serve hot with chapatis or paratha.

It goes well as a side dish with dal makhni,kadhi pakora ,Dum aloo,Chhole,Mung dal, Stuffed baigan.
