Eggless Whole wheat Chocolate Waffles

This waffle recipe is from the book which I got with my waffle maker. Original recipe used white flour which I changed it to wheat flour .

  1. 1 cup whole wheat flour
  2. 1/4 cup corn flour
  3. 1/4 tsp baking powder
  4. 1 tbsp Choco powder
  5. 3 tsp sugar
  6. 1/4 cup melted butter/oil(I used coconut oil)
  7. 1  1/2cup milk
  8. a pinch of salt
  9. Maple syrup or honey to serve with waffles

Method

  1. Sieve together wheat flour, corn flour ,choco powder ,salt and baking powder.
  2. Mix oil, sugar and milk together.
  3. Add the flour mixture and mix well to a smooth batter. The batter should have a consistency neither too thick nor watery.
  4. Heat your waffle maker.
  5. Pour 1 ladle of the batter in the center and close the lid of the waffle maker .The batter spreads itself .
  6. Wait for the green light to turn on .
  7. Serve hot waffles with honey.

Saffron Sandesh/ Deepawali Special

Happy Diwali to all my friends and readers . Have a safe and prosperous Diwali.
Sandesh is a very famous Bengali sweet. It will ready in no time. So let’s try it.
Ingredients

  1. 1 big cup moist paneer / Indian cottage cheese
  2. 5 tbsp sugar
  3. 1/2 tsp cardamom powder
  4. saffron strands soaked in 1 tbsp of hot milk (optional)
  5. Pistachio for garnish

Method

  1. Take the paneer in a plate and knead it with the help of your palms.
  2. Knead it till the mixture becomes smooth.
  3. Add sugar, saffron soaked milk, cardamom powder and knead it again.
  4. Add this mixture to a hot non stick pan.
  5. Mix well and cook on a low flame.
  6. The mixture melts off and cook until you get a thick consistency and the mix leave the sides of the pan.
  7. Put the mixture back to the plate so it becomes cool down.
  8. Knead it again and roll to balls and flatten slightly.
  9. Garnish with pistachio and saffron.
    Refrigerate and serve…..😍
  10. It yields 16 sandesh.

Perfect recipe for fasting.

Beetroot in hindi called chukander. Celebrate this year  Dusshera with healthy dessert which is ready in no time.

Ingredients

  1. Beetroot 2cups(peeled &grated)
  2. Milk 1 cup
  3. Milk Powder 1 cup
  4. Sugar 1/2cup
  5. Ghee 1tbsp
  6. Pistachio chopped 10-12

Method

  1. Heat ghee in a pan and add grated beetroot and cook till it gets soft.
  2. Add milk. Stir till all milk evaporates.
  3. Add sugar and mix well, stir occasionally,cook until mixture turn thick.
  4. Add milk powder and cook on medium heat till mixture turn completely dry.
  5. Pour this mixture on greased plate or butter paper.Garnish with chopped
    Pistachio or any other nuts.
  6. Slightly pressed them and let it cool then keep in refrigerator for 1 or 2 hours.
  7. Cut it into desired shape.
  8. Perfect dessert for fasting.

You can add khoya  too if you don’t have milk powder.

Paneer Kheer/ Janmashtmi Special

Paneer kheer is one of the quick recipe of making dessert.

Ingredients

  1. Paneer 100 gms
  2. Full cream milk 1 ltr
  3. Sugar 3/4 cup
  4. Dryfruits( I used chopped pistachio ) almonds,cashews can also be used.
  5. Few strands of saffron

Method

  1. Boil the milk . Soak saffron in half cup of warm milk.
  2. Add saffron milk and reduce it till 3/4 of its quantity.
  3. Add sugar.
  4. Add grated or crumbled Paneer.
  5. Simmer it for some time.
  6. Add cardamom powder.
  7. Garnish with any dryfruits.
  8. Serve hot or cold.
  9. Perfect dessert for fasting.

I have no wish other than to have you for the rest of my life.

Rabdi is a popular North Indian dessert made up of milk. In this we collect layers of malai on the side of pan. After that cut it and add it in rest of the milk. This is my grandmother’s recipe. In my childhood we always had cows in my home so we get lots of milk . When ever we had craving for dessert, my grand mother made this recipe.

Ingredients

  1. Full cream milk 1 and 1/2litre
  2. Few strands of saffron
  3. Sugar  6-7 tbsp
  4. cardamom Powder
  5. Dry fruits chopped

Method

  1. Take a broad pan . Heat the milk on medium flame.
  2. Soak saffron in warm milk.
  3. Add saffron soaked milk.
  4. when you see cream on top ,move the layer on the side of the pan.
  5. Keep simmering the milk and collecting the cream on the side.
  6. This process of collecting cream will take around 1 hour.
  7. Once milk reduces to 1/4 add sugar and cardmom powder.
  8. Switch off the flame.
  9. Once its cool cut the layers of cream and add in the remaining milk.
  10. Add your favourites dry fruits and serve warm or chilled.
  11. This dessert is perfect for fasting.
