1 cup of warm water(I used half milk and half water)
2 tbsp of olive oil
1 tsp of sugar
1/2 tsp of salt
Take out flour in any utensil and add sugar, instant dry yeast (there is no need to active instant dry yeast in lukewarm water), 1 tsp salt and 2 tsp oil in the flour and mix well.
Add little amount of lukewarm mixture of milk and water in the dough at a time and prepare a soft dough like that used for making chapatti’s. Knead dough for about 4-5 minutes until it becomes soft. Grease the dough with little oil, cover it and keep it aside for 1 hour for fermenting.
Meanwhile you can work on the stuffing. For the stuffing you can use any dry vegetables.
So the peas, corn and potato stuffing I used is given below.
Dough has fermented, now stuff the balls. Divide the dough and stuffing in 8 equal halves. Take one part in your hand and make a round ball. Flatten the ball with your hand and make a place in center. Fill the stuffing in the center and seal the stuffing from all sides. Flatten the ball.
Grease the baking tray with oil and place the flatten ball on the tray. Like wise prepare all balls. Keep them aside for 1/2 an hour .
Now keep them in oven for baking. Set the oven temperature to 200 degree centigrade and cook for 30 minutes in oven. Check after 15 minutes. Bake more if not cooked properly.
After taking out from oven brush them with oil.
Stuffing for Masala Pav
4 boiled potatoes mashed
1/2 cup corn
Hand full of fresh coriander
1 tsp of chopped ginger
1 tsp of chopped green chili
1/2 tsp turmeric powder
1/2 tsp of Garam masala
1/2 tsp red chili powder
1 tsp amchur powder
1 tsp cumin seeds
1 tsp coriander powder
Salt and pepper to taste
1 tsp of cooking oil
Method of stuffing
In a wok, add the cooking oil, and let it heat. Over medium heat add in the cumin seeds, chopped ginger and chilies.
Saute for a few seconds. Now add in the corn and peas. Let them cook.
Add boiled potatoes and add the coriander powder,chili powder, garam masala, amchur, salt, and pepper.
Taste the stuffing and adjust the flavours accordingly.
Lastly add fresh coriander leaves. The stuffing is ready.
Eggless Multigrain Walnut Brownies/ 17th Marriage Anniversary
Today 4 February is my Marriage Anniversary so small treat for my hubby from my side . We passed 17 years together but still I feel that I married few months back only. But when I look on my kids then only realize time flies so fast.😘😘😘😘
1 cup multigrain flour
1/2 cup cocoa powder unsweetened
3/4 +1 tbsp cup powdered normal sugar/brown sugar(I used brown sugar)
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts
5 tbsp vegetable oil(I used sesame oil)
1 tsp essence of your choice(I used pineapple essence)
2 cup buttermilk
1 tsp Vinegar(I used apple cider vinegar)
1 sachet of three in one coffee I used Nescafe)
Mix coffee powder in 2 tbsp hot water.
Preheat oven .
Measure dry ingredients in a bowl. Stir with a whisk .
Measure wet ingredients in another bowl. Stir to combine.
Pour dry ingredients into wet ingredients. Stir with a spoon.
Add chopped walnuts.
Pour the batter into a greased pan.
Bake for 30 to 40 minutes.

As I belong to Uttar Pradesh, Nan khatai are very common at my house. There is an annual fair held at Meerut called Nauchandi Mela.The biscuit makers make this local biscuit or cookie, called “Nankhatai”. It is made and sold on the spot.
I made Nankhatai so many times but this time I did a twist. I added chocolate powder to it .It came out very delicious.
Maida 1 cup
Gram Flour 1/2 cup
Choco Powder 2 tbsp
Pure Ghee 1/2 cup( I used home-made desi ghee)
Powdered Sugar 1/2 cup(I powdered normal sugar in mixie)
Cardamom Powder 1/2 tsp
Baking Powder 1/2 tsp
Baking Soda 1/4 tsp
Milk 2 tbsp or as needed
Preheat oven to 200 degree C. Line a baking tray with foil and set aside.
Take flour, gram flour, Choco powder, baking soda, baking powder in a bowl and mix well.
Take Ghee, powdered sugar, cardamom powder in a bowl and mix well.
Now add in the flour mix and fold well. Add milk if required and knead to a soft dough.I used 2 tbsp of milk.
Take small part of the dough and roll it into a ball. Roll it in chopped almonds and arrange it in tray.
Bake for 20 – 25 mins or till golden.
Remove from oven and let it cool completely.
Store in an air tight box and Serve.
I got 20 nankhatais in this much quantity.

One day I saw granola bars at internet. Then I tried my hands on these bars .The actual recipe uses bananas but here I have done without bananas and did so many other variations according to the ingredients available in my kitchen. These bars are so healthy and tasty that they vanish in no time.😍😍😍
1 cup uncooked quinoa
1 cup rolled oats
3 tbsp Sesame seeds( I used half black half white)
1/2 cup dry coconut
1 cup dry fruits( I used almonds,cashews,pistachio)
1/4 tsp salt
1/2 cup butter
3/4 cup honey
1 tbsp oil( I used organic coconut oil)
3 tbsp Sugar( I used organic brown sugar)
In a pan roast oats,sesame seeds and quinoa seeds.
Return mixture to a large bowl and add coconut and dry fruits.
In a medium saucepan combine salt, butter, honey, oil, and brown sugar.
Bring to a boil over medium heat and immediately remove from heat.
Pour over oats mixture and combine until dry ingredients are evenly coated. Pour into baking tray. Press mixture down into tray.
Bake for 12-15 minutes on 200 degree C. Let it cool for half an hour and then put cut marks. After 1 hour take it out and serve.
