Purple Juice Recipe/Rainbow Juice

Purple Juice Recipe/ Rainbow Juice

My morning  daily starts with a glass of fresh juice. This is one of the recipe.

Fruit and vegetables fall into different colour categories: red, purple/blue, orange, green and white/brown. Each colour carries its own set of unique disease fighting chemicals called phytochemicals. It is these phytochemicals that give fruits and vegetables their vibrant colour and of course some of their healthy properties.

Buckwheat Flour Uttapam/Kuttu Ka Atta Uttapam

Buckwheat Flour Uttapam/Kuttu Ka Atta Uttapam

Two days back it  was Maha Shivratri ,festival of Hindus in India. On this day people observe fast and offer fruits, flowers and bel leaves on Lord Shiva. I  also  fasted so I prepared Buckwheat flour Uttapam which is healthy and has less oil.

Ingredients

  1. 1 cup  buckwheat flour
  2. 1 cup grated bottle guard/louki
  3. 1 tsp chopped ginger and chili
  4. salt to taste Sendha namak
  5. Coriander leaves
  6. 1 cup water

We can also used  grated potatoes or  can used half louki and half potatoes.

Method

  1. Combine the flour, ginger, chilli paste, grated louki ,coriander leaves and salt and mix well to make a smooth  thick batter .
  2. Heat a tava and when its hot wipe it with a wet cloth.
  3. Spread the thick layer of batter on the tawa and make a thick circle.
  4. Cook on a slow flame using little oil till it is cooked from both the sides.
  5. Serve hot with green chutney and yogurt.

Make only 2-3 uttapam batter at a time otherwise louki starts releasing water and batter becomes thin.In this much amount I got 3 big uttapams.

You can check Buckwheat flour Paratha here.

Melon Seeds Snack(Kharbooja Giri Namkeen)

Melon Seeds/Kharbooje Ki Giri

Melon seeds namkeen  is good in taste and can be ready any time.As it is now eight month that means saavan is going on.So I will keep fast for all the Mondays. So today is the second monday of saavan so I  decided to make this healthy namkeen .My family likes it a lot.

Ingredients

  1. Melon seeds – 1 cup
  2. Almonds – 1 cup
  3. Cashews – 1 cup
  4. Ghee – 1 tbsp
  5. Black pepper – ½ tsp
  6. Some salt(I used sendha namak)

Method

  1. Heat a pan add some ghee and place melon seeds into it and stir constantly. Roast them on medium flame. If they spill out while roasting then hold a plate in left hand, cover and roast the seeds.
  2. Take out the roasted seeds in a plate.
  3. Again in a pan. Add some ghee . Now place cashews into it and stir them constantly on medium flame . Next roasted  almonds. Now mix all  roasted seeds together.
  4. Add salt and black pepper and mix everything really well.
  5. let it cool down and store in air tight jar for a month.

Suggestion:

Sometimes I added  makhana  in this namkeen.

After my delivery my mother in law gave this namkeen to me for eating as a snack. As we were only allowed  to eat desi ghee . So we weren’t allowed to eat any outside snacks.

We can add sugar also in this mixture instead of salt and pepper.
